Chispa wanted to throw an I love you Mommy Party today!

Chispa wanted to throw me an "I love you Mommy party" when I felt better from the strep. She announced this 2 days ago, and hadn't let it go.

Today when I woke up, she had cleaned the whole kitchen table off before we woke up, moved everything off it. (no small task)
And moved the bouquet of flowers we'd been given to my seat, and found some fancy sunflower napkins in the closet and set them out.

It was so cute, and I finally had energy today thanks to the penicillin for my strep, that I was feeling indulgent.

Chispa had also announced that we needed an I love you cake. With colored frosting and piped writing. And it must be round. And have Billy Goats Gruff on it. And I love you hearts. The hearts need to be pink. And it needs to say "I love you Mommy"

So indulge Chispa I did. We were going to bake, and figure out dinner later, somehow. I convinced her we could make a date-applesauce "cake", a quickbread recipe I had all the ingredients for, given that Simone was, in theory, napping. We baked the cake in a round cake pan.

Chispa zigged my leftover suggestions. Mercifully, she also announced she wanted (soy meat) bolognese sauce for dinner, which I had in the freezer, so I defrosted that, and roasted some brussel sprouts for our hungry sous chef and cranky non-napping Changa.

Luckily, Mr. H appeared at the exact right moment, and we all ate dinner.
Chispa and I needed to go on a run to the store for food coloring. I didn't want to take no-nap Changa with us.

The question was, do I spend a bloody fortune on the fancy non-nasty coloring at Whole Foods? $4.99 for EACH color.
Or just say, oh well, we don't eat the junk much, and two drops in the frosting we make won't kill us. I decided to buy the hippie coloring, it will last forever. Chispa and I acquired the coloring, and went home, and I whipped up a batch of cream cheese frosting, and we mixed the colors.

I have NEVER used it yet, but I did get an icing piping tip set from J's bridal shower in March. It's inaugural run was clearly coming. All you need is to pierce a hole in a baggie for the bag. We can do this, right?
The pink (beet juice extract) was beautiful.
The yellow (turmeric extract) was beautiful.
The "blue" (blueberry, I should have known), was purple/pink, like blueberries, and not blue at all! I need to return that and buy FD&C poison #963 blue.

Luckily, Chispa was flexible about the "colors". We got pink for the hearts, and yellow for the moon, the rest wasn't as critical to her.

There's also a song. Sung to the tune of Happy Birthday.

"I lu-uve you MOMMY" "I lu-uve YOU MOMMY" "I lu-uve you Maw Mee" "I lu-uve YOU MOMMY".

Chispa declared it the best day ever. So I think we fulfilled her dreams. I mean seriously, HOW cute is that? She was so earnest about it all. For all her challenges, could this project be any sweeter?????

As you can see, this is exactly a billy goat, no?
